One of our favorite cheap meals is Taco Lasagna.
ReplyDelete1/2 pound ground turkey sausage
1 tablespoon homemade taco seasoning
1 can black beans, rinsed and drained
1 1/2 cups homemade refried beans
4 tortillas
1 cup of whatever cheese is cheapest (Cheddar, Colby, American)
1/3 can diced tomatoes and green chilies
1/4 cup onion, diced
1/4 cup bell pepper, diced
Cook meat with onions and bell pepper. Stir in everything but the cheese and tortillas. Place 2 tortillas on the bottom of a 2 qt casserole dish. Top with 1/2 of meat mixture. Top with 1/2 of cheese. Top with remaining tortillas. Tops with meat followed by cheese. Bake 30 minutes.
For me this meal costs less than $3 to make in part because of the homemade ingredients and in part because of our garden where the onion and bell pepper came from.

Here's my favorite inexpensive meal to make (Chicken Rice Casserole):
ReplyDelete1 can cheddar cheese soup
1 can mushroom soup
1 lb. boneless skinless breasts, cut in pieces
3 potatoes, cubed
2 cups white rice
1 bag shredded cheddar cheese
Optional: chopped broccoli
Combine rice and both soups with 2 cups water in casserole dish, stir well. Add potatoes, chicken, broccoli (if desired), and top with shredded cheese. Bake covered at 350 degrees for about 45 minutes. Remove foil and bake for another 10-15 minutes. This meal serves my family of 4 for at least 2 separate meals.
Approximate cost for meal:
2 soups - $1.50
Chicken - $3.00
Potatoes - $ .50
Rice - $ .50
Cheese - $2.00
Broccoli - $1.00
TOTAL: $8.50 (or $4.25 per meal)
